Set sail for a tropical-inspired culinary journey as Sails presents Rum & Dine, a four-course degustation paired with handcrafted rum cocktails from the award-winning local Devils Thumb Distillery.
Each course is designed to bring out the tropical character and complexity of locally produced rum:
• Flame-grilled jerk chicken skewer with pineapple salsa · Piña Poquita, pineapple rum, pineapple juice, coconut purée, lime.
• Salmon tiradito with tropical tiger’s milk, avocado, crispy calamari · Passionate Punch, cane spirit, passionfruit, apricot liqueur, lime.
• Slow-cooked pork belly with plantain mash, chilli molasses glaze · Devil’s Daiquiri, spiced rum, cinnamon, lime.
• Banana flambé with candied orange, rum & orange glaze, vanilla ice cream · Banana Bonanza, banana flambe rum, pineapple rum, lime, orgeat.
